Quiche Caprese Low Carb Chickpea Base

  • Cooked Chickpeas200 g
  • Almond flour (or coconut flour, or flaxseed, or oat bran, or any other nut)1 cup
  • Olive oil1/4 cup
  • Chicken eggs2 unit(s)
  • Salt to taste
  • Filling: chicken eggs3 unit(s)
  • Cow's milk400 ml
  • Mozzarella Cheese1 cup
  • Parmesan cheese1 cup
  • cherry tomato200 g
  • Salt and pepper to taste
  1. In a bowl, beat the eggs, add the milk, cream, Parmesan, season with salt and pepper and mix well with a whisk.
  2. With the help of a mixer or processor, turn the chickpeas into a paste, without adding water. In a bowl mix all the ingredients until it becomes a uniform mass and take it to the fridge for 20 minutes. ⁣
  3. Remove the dough from the fridge and with your hands, line the bottom and sides in a form with a removable bottom (we used 28cm). ⁣ Bake for 10 minutes in a preheated oven at 180°C and then place the filling in the pre-baked pie, distribute the pieces of cheese, whole tomatoes and basil leaves.
  4. Bake in oven at 180° for approx. 1h30 or until the dough is firm and golden. Good appetite!!
