- Cooked Chickpeas200 g
- Almond flour (or coconut flour, or flaxseed, or oat bran, or any other nut)1 cup
- Olive oil1/4 cup
- Chicken eggs2 unit(s)
- Salt to taste
- Filling: chicken eggs3 unit(s)
- Cow's milk400 ml
- Mozzarella Cheese1 cup
- Parmesan cheese1 cup
- cherry tomato200 g
- Salt and pepper to taste
- In a bowl, beat the eggs, add the milk, cream, Parmesan, season with salt and pepper and mix well with a whisk.
- With the help of a mixer or processor, turn the chickpeas into a paste, without adding water. In a bowl mix all the ingredients until it becomes a uniform mass and take it to the fridge for 20 minutes.
- Remove the dough from the fridge and with your hands, line the bottom and sides in a form with a removable bottom (we used 28cm). Bake for 10 minutes in a preheated oven at 180°C and then place the filling in the pre-baked pie, distribute the pieces of cheese, whole tomatoes and basil leaves.
- Bake in oven at 180° for approx. 1h30 or until the dough is firm and golden. Good appetite!!
