- Fresh Basil to taste
- Sliced Carrot Eggplant2 unit(s)

- In a pan, add a drizzle of olive oil and sauté the onion and garlic.
- Add the tomato, salt, oregano, cumin, pepper, basil, mix and cook for about 5 minutes. Put a little oil aside.
- Place the eggplant slices in a colander, sprinkle with salt and let dry for 30 minutes.
- Wash the eggplant well to remove the salt and dry with a paper towel.
- On a platter or shape, pour all sauce spreading across the bottom.
- Layer vertically with vegetables vertically
- Season as you prefer, drizzle with olive oil, cover with aluminum foil and bake in a preheated oven at 180° for 30 minutes.
- After that time, increase the oven to 230°C, remove the foil and leave for another 20 minutes (the ingredients should be soft)
