- Ripe strawberries100 g
- Blueberries50 g
- Raspberries50 g
- Lemon juice to taste
- Cream cheese110 g
- Butter25 g
- Refined Xylitol2 tablespoon
- Vanilla Extract1 tablespoon
- Clara1 unit(s)
- Refined Xylitol3 tablespoon
- Lemon zest to taste
- In a hot pan add the strawberries and then a tablespoon of xylitol, cover so that the strawberries release juice. Then add the blueberries and repeat the process of closing the pan for a few moments. Add a few drops of lemon juice. Finally add the raspberries and turn off the heat. Reserve.
- In the bowl of an electric mixer, add the cream cheese, butter, vanilla extract and xylitol. Beat until the cream is smooth and dense.
- Add the whites to the potato again in a super clean and dry bowl, beat until it reaches firm peaks and only then gradually add the xylitol until it is sparkling and elastic.
- Distribute the meringue on the plate and burn with the blowtorch (optional) place the red fruits and finally the ice cream.
