- Choose two plump eggplants. Cut them in half, make diagonal cuts in their brains forming diamonds in the design and bake at 200°C for 40 min. The brain needs to be very soft
- Once cooked, remove the core with a spoon.
- Prepare the shredded chicken to taste, and mix with the eggplants.
- Stuff the eggplants with this mixture.
- Add half a slice of mozzarella cheese to each band of the eggplant.
- Bake in the oven until the cheese melts.
