- Cut the eggplant in half, and in a frying pan let it fry both sides until the middle softens. Remove from the skillet and remove the brains from the eggplant halves.
- In a pan, put the ground beef to sauté, add the garlic and onion and let everything fry well. Season with salt and pepper
- Blend the 6 tomatoes in a food processor and mix with the meat. Also add the eggplant to the mixture. Let the sauce boil for 20 minutes, Thick sauce. Season to taste.
- For assembly: put the catupiry on each eggplant and fill it with the meat sauce. Finally, add the mozzarella cheese and bake in the oven until golden brown.
