- Grape Tomato to taste
- Thyme to taste
- Cut the eggplant into two equal parts. With the help of a knife, remove the core without damaging the shell.
- Cut the core into cubes and mix in the grated Parmesan cheese, the curd and the chopped tomatoes.
- Season the eggplant with salt and black pepper or seasonings of your choice.
- Stuff the reserved eggplant with the chopped eggplant and other ingredients.
- Finish with fresh thyme and olive oil.
- Take to bake in the airFryer for 25 minutes at 180 degrees. You can also choose to bake in the oven.
