- Almond flour160 g
- Butter155 g
- Egg white4 unit(s)
- Hydrated dates100 g
- Egg Yolk64 g
- Filtered water3 tablespoon
- Vanilla Extract1 tablespoon
- Pre-heat the oven at 180 °.
- In a mixing bowl, add the butter and beat until creamy. Then add the yolks and beat more to homogenize. Reserve.
- Process the hydrated dates with the 3 tablespoons of the mentioned water and the vanilla extract. Beat until it forms a very smooth cream.
- Add the dates to the mixing bowl and beat to incorporate the date cream. Reserve.
- Chop the chocolate and melt in a bain-marie.
- Add the chocolate to the butter cream and dates until smooth. Reserve.
- Add the flour little by little over the finished dough until well homogenized.
- Beat the egg whites and add 1/3 of the whites to the dough and mix well. Add the rest of the snow whites making light movements so that the dough is aerated.
- Add the dough in a greased shape and bake for approximately 25 minutes.
