- Large purple sweet potato or the potato of your choice2 unit(s)
- Cooked and shredded chicken breast300 g
- Chopped Pepper1/2 unit(s)
- Salt to taste
- Olive oil to taste
- Garlic2 unit(s)
- Chopped Onion1 unit(s)
- Chopped green smell to taste
- Cream cheese4 tablespoon
- Chopped tomato or tomato sauce1 unit(s)
- Boil the potatoes in water until covered. Don't let it overcook until it breaks down, just until it's soft. TIP: Cook the potato in the microwave! Wrap paper towel in it, soak and place for 5min, open and see if it's cooked. The time will depend on the size of the potato!
- Season the cooked and shredded chicken breast using all the ingredients on the list. Start by sautéing garlic and onion in olive oil, add the peppers and tomato.
- Add the chicken, stir well. Put the cottage cheese, green smell and adjust the salt.
- Make a hole in the potato where you will put the stuffing. You can use this leftover to mix in the shredded chicken itself!
- Stuff your potato and enjoy! It's sensational. A way to change the everyday chicken and potato!
