- Zucchini1/2 unit(s)
- Carrot1 unit(s)
- Kale Butter2 unit(s)
- Spinach1 cup
- Salt to taste
- Oregano1/2 teaspoon
- Olive oil1 teaspoon
- Egg5 unit(s)
- Cut the onion in half moon;
- Grate the zucchini and carrots;
- Cut the kale and spinach leaves into thick strips;
- Sauté the onion in the oil until it starts to caramelize;
- Add the grated vegetables, salt and oregano and sauté for 3 minutes;
- Add the green leaves and mix;
- Add the beaten eggs and cover the skillet;
- Cook on both sides over low heat. And it's done!
