- Cashew Nuts1 cup
- Water1 cup
- Garlic Cloves2 unit(s)
- Chopped Onion1/2 unit(s)
- Nutritional yeast (optional)1 tablespoon
- Olive oil1 tablespoon
- Salt to taste
- Nutmeg to taste
- Soak the cashews for at least 1 hour (I left them for 8 hours). Discard the water and wash the chestnuts well. Reserve. In a pan, sauté the onion and garlic in olive oil. Then, put 1 cup of water in the blender and add the chestnuts, the sauteed onion and garlic and the nutritional yeast. Blend the mixture in a blender until it becomes a homogeneous cream. Bring the mixture to a low heat until heated through. If you want a more consistent cream, leave it on the fire for longer, until it reduces. If you want a more liquid sauce, just add a little water. Add salt and nutmeg to taste.
