- White Wheat Flour1/2 cup
- Oat Flour1/2 cup
- Whole Wheat Flour1/2 cup
- Brown Sugar1 tablespoon
- Pinch of Salt to taste
- Vanilla Essence1 teaspoon
- Egg1 unit(s)
- Skimmed or semi-skimmed milk3/4 cup
- Sunflower Oil or your choice1 tablespoon
- 1 Spoon Baking Powder1/2 teaspoon
- Beat the egg, sugar, salt and vanilla with a whisk until well blended, add the oil and beat some more. Add the flours, milk and mix well, then finally add the baking powder. In a non-stick skillet just brush a little oil (or nothing if you prefer). Measure each portion of dough with a medium ladle and fry, always on low heat so it doesn't get raw in the middle. You'll know it's time to flip your pancake when it starts to bubble in the batter. They should be golden brown on both sides. Tip: This recipe takes little sugar, to be more neutral, so you can eat it with honey, molasses or jam without getting cloying. If you want, you can also bake in the waffle maker.
