- Tomato sauce3 cup
- Coarsely grated cheese (can be to taste the cheese)2 cup
- Nuts1 cup
- Fresh herbs, parmesan, salt and black pepper to finish1 to taste
- 1. Cut the zucchinis into medium slices [I like to use a mandolin, it's much faster and the slices are the same thickness!], grate the cheese [on the thickest part of the grater], chop the nuts and herbs;
- 2. Place a little tomato sauce on the bottom of a refractory and arrange the zucchini slices – I like to drizzle them with a little olive oil and sprinkle with fleur de sel to flavor them. Put some cheese and nuts;
- 3. Repeat until you finish the zucchinis – the ideal is 3 layers of zucchini. Finally sprinkle cheese, nuts and fresh herbs. A little Parmesan is good to finish off because it has a more pronounced flavor and forms a crunchier crust, but it's not essential;
- 4. Cover with aluminum foil and bake in a preheated oven at 200° for approximately 30 minutes. When the lasagna is cooked, remove the aluminum and let it brown [if your oven has a grill, use it, 2 minutes is enough!].
