  • Half zucchini (prefer a large size)1/2 unit(s)
  • Rice or wholemeal flour3 tablespoon
  • Egg1 unit(s)
  • Salt to taste
  • Black pepper to taste
  • Smoked paprika to taste
  • Oregano to taste
  • Olive to taste
  • cherry tomato3 unit(s)
  • Cheese (your choice and slices)3 unit(s)
  1. In a bowl, grate the zucchini.
  2. Mix the egg, flour, salt, paprika and pepper and set aside.
  3. Grease a skillet with a drizzle of olive oil or coconut oil. It is important that the skillet is non-stick.
  4. Heat the skillet and pour in the zucchini mixture. Let brown both sides.
  5. When golden add the cheese, tomatoes, oregano and olives.
  6. A low carb option with a lot of flavor! Serves two people if using a large zucchini.
