- Rice or wholemeal flour3 tablespoon
- Egg1 unit(s)
- Salt to taste
- Black pepper to taste
- Smoked paprika to taste
- Oregano to taste
- Olive to taste

- Cheese (your choice and slices)3 unit(s)
- In a bowl, grate the zucchini.
- Mix the egg, flour, salt, paprika and pepper and set aside.
- Grease a skillet with a drizzle of olive oil or coconut oil. It is important that the skillet is non-stick.
- Heat the skillet and pour in the zucchini mixture. Let brown both sides.
- When golden add the cheese, tomatoes, oregano and olives.
- A low carb option with a lot of flavor! Serves two people if using a large zucchini.
