- Zucchini cut into spaghetti shape2 unit(s)
- Chopped Onion1/2 unit(s)
- Garlic Clove2 unit(s)
- Chopped leek1 tablespoon
- Olive oil for sauteing0 to taste
- Buffalo mozzarella1 tablespoon
- Cottage cheese1 tablespoon
- Grated Parmesan2 tablespoon
- Salt0 to taste
- Clean the zucchini and use a spiral cutter to make the spaghetti. If you don't have it, you can do it with a knife.
- Saute onion and garlic in oil. Then add the minced garlic.
- Add the zucchini spaghetti and mix well.
- I added the Parmesan cheese and some hot water. Shake well.
- Add the buffalo mozzarella and stir again.
- Put the cheese and mix. Let it cook until al dente.
- Serve hot and add halved cherry tomatoes for garnish.
