- Water500 ml
- Leave the beans to soak for at least 1 hour, drain and put to cook in an amount of water that covers the beans. After the cooker gets pressure I leave it for 20 minutes. Cooking time varies depending on the quality of the beans. Leave it a little firmer, because then it will boil along with the other ingredients.
- Chop the Bacon, the Sausage and the Paio, the Pernil (in large pieces) and the Pig Rabinho, wash. The Sausage, the Pig Rabinho and the Paio I advise to boil. Reserve.
- In a pan put a tablespoon of lard or oil, put the Pernil, the Rabinho, the Coloral, the Salt, fry until you start releasing fat and getting color. When it has a little color, add the Bacon, the Paio, the Sausage and mix, let it fry a little longer. Put more or less 500 ml of Water, the Bacon Broth, the Pepperoni Pepper, the Oregano, the Bay Leaves and let it cook for 10 minutes after getting pressure.
- Turn it off, let it cool, put the beans without the broth, mix, taste the flavor, if it's stale or you don't like it, add a little more of the spices on the list. You will only use the Bean Broth if you need to add more water. Let it boil and thicken and you will have a delicious Feijoada from Tia Regina.
- Serve with white rice, orange slices, vinaigrette.
