- Green Beans (I cooked them in the dried meat cooking water)2 cup
- Olive oil3 tablespoon
- Calabrian sausage cut into cubes1 unit(s)
- Desalted, cooked and cut dried meat400 g
- Chopped Onion1 unit(s)
- Squeezed Garlic4 unit(s)
- Rice (raw)1 cup
- Bean cooking water2 cup
- Coalho cheese (gold in the frying pan)300 g
- Chopped Coriander2 tablespoon
- In a pressure cooker, place the beans, cover with water (+/- two fingers above) lead to medium heat
- Let it cook for about 25 minutes
- Drain the beans, reserving the cooking liquid.
- Put the oil in a pan and heat it, add the pepperoni and fry until golden
- Add the dried meat, onion, garlic and sauté
- Add the rice, the reserved bean cooking water
- Mix well and cook over medium heat.
- Add the cooked beans, mix well and remove from heat.
- Add the curd cheese and finish with finely chopped cilantro.
- Ready!!
