- Pre-cooked black-eyed peas500 g

- Cook the black-eyed peas without salt, just in water, until they are al dente. Reserve.
- Desalt the jerky in boiling water 4 times, replacing the water and reserving the same for the preparation of the baião de dois.
- In a large pot, put a thread of olive oil and add the bacon cut into large cubes, wait for it to brown. Then add the chopped onion and garlic, the paio, the calabrese sausage, the dried meat already desalted and the rice. Mix it all up. With the help of a ladle, add the desalting water to cook the rice and give the exact point of salt. Mix everything and add the ingredients: chopped peppers, curd cheese cut into large cubes and the butter. Stir well and add the desalting water whenever necessary.
- When the rice is almost ready, add the black-eyed peas, coriander and chopped chives, mix everything together and enjoy the tastiest dish in Northeastern cuisine!
