- The paw must be cut into slices and washed well under running water.
- Take it to the pressure cooker, cover with water and vinegar, and let it boil.
- After boiling, throw the water away and, in the same pan, squeeze the lemon.
- Add salt, garlic and onion, and let it braise a little.
- Then add the cloves, tomatoes, paprika and dry seasonings, enough water to cover (add chili pepper if desired).
- Cover the pan and, when the pressure starts, lower the heat to let it cook.
- The ideal is to, from time to time, turn off the heat, wait for the air to come out, open it and check if it is necessary to add more water.
- When the bones loosen, it's ready.
- Finish with finely chopped cilantro or parsley and bon appetite.
