- Pork loin1 kg
- Orange Juice1 cup
- Brown Sugar100 g
- White Vinegar2 tablespoon
- Olive oil2 tablespoon
- Salt to taste
- Pepper to taste
- Thyme1 unit(s)
- Season the loin with salt and pepper. Reserve.
- In a pan, add the orange juice, sugar, vinegar and thyme sprig. Let it cook on low heat until it reduces and has the consistency of a sauce.
- Sear the tenderloin in the hot olive oil, until it's very golden. Transfer to a refractory and water with the orange reduction.
- Take to preheated oven at 200°, until golden. Drizzle with the orange sauce from time to time to make it juicy and well caramelised, but reserve a little of the sauce to sprinkle on top when serving.
