- The day before, season the chicken pieces with salt, pepper and a mixture of lemon juice and crushed garlic. Leave it in the fridge. The next day, take it out 1 hour before you start cooking. Heat a heavy pan (preferably cast iron) and add the oil. Add the bacon cubes and let them brown well. Add the bay leaf, the chicken pieces and cook for 10 minutes, turning constantly and adding a little boiling water. Add the tomato sauce, a little more boiling water and cook slowly until the meat is tender. When necessary, add a little more water. At the end, add the sage leaves and mix well. Serve with pasta, polenta or rice.
