  • Clean lizard250 g
  • Pepperoni Sausage100 g
  • Garlic2 unit(s)
  • Carrot50 g
  • Potato50 g
  • Small onion1 unit(s)
  • Tomato1 unit(s)
  • Pepper60 g
  • Olive oil20 ml
  • Bay Leaf1 unit(s)
  • White Wine50 ml
  • Tomato Extract20 g
  • Light background to taste
  • Salt and Pepper to taste
  • Bouquet Garni (leek, thyme, bay leaf and parsley)1 unit(s)
  • Butter1 tablespoon
  1. Clean the meat and cut into small cubes and season with salt and pepper.
  2. Cut the sausage into small cubes, about the same size as the meat.
  3. Mince the garlic, onion, tomato, pepper, carrot and potato in brunnoise.
  4. Sear the meat in the oil with a little butter and let it dry.
  5. Add the sausage and let it brown.
  6. Add the garlic and onion and let it sauté.
  7. Add the tomato and pepper and sauté a little more.
  8. Add the vegetables and deglaze with wine.
  9. When it evaporates, add the bay leaf, extract, Bouquet, adjust salt and pepper and cover with a light base.
  10. Let the broth reduce enough.
