- Thin pepperoni sausage150 g
- white beans300 g
- Olives90 g
- Chopped Ripe Tomato1 unit(s)

- Tomato extract2 tablespoon
- Chopped Garlic1 tablespoon
- Olive oil1 tablespoon
- Salt, smoked paprika, hot paprika and paprika to taste

- Soak the beans in water for 2 hours. With the tripe already clean, I cut it into strips and put it in a bowl, covered it with water and squeezed the lemons, left it to soak for 30 minutes.
- After that time, I drained all the water and washed the tripe pieces, put them all in a pan and covered with water, put 1 bay leaf and took it to the fire, boiled it for 10 minutes, drained the water and washed it again. This process is important because it serves to eliminate the strong smell of tripe.
- In a pressure cooker, I added the olive oil and fried the sausage pieces, added the garlic and onion, sautéed together, added the tomatoes, peppers, tomato paste and all the seasonings, finally I added the tripe pieces, poured water until covered, covered the pan and cook for 15 minutes.
- I removed the pressure and added the beans, covered the pan again and cooked for another 10 minutes.
- I removed the pressure, adjusted the salt, left it over low heat until the broth was clear, finished with the olives, green smell and pout peppers.
