- Pork shank, cubed800 g
- Onion1 unit(s)
- Green pepper1/2 unit(s)
- Yellow pepper1/2 unit(s)
- Bay leaves3 unit(s)
- Salt to taste
- Pepper to taste
- Lemonpepper to taste
- Rosemary to taste
- Olive oil1 tablespoon
- Minced Garlic Clove3 unit(s)
- Chopped tomato1 unit(s)
- In the pressure cooker, heat the oil and sauté the onion and garlic.
- Add the meat and let it sear.
- Season with salt, pepper, lemonpepper, bay leaves and sauté for about 3 minutes.
- Add the sliced peppers, rosemary and sauté a few more minutes.
- Add 2 cups of water and cover the pan. When it comes to pressure, let it cook for 30 minutes.
- After 30 minutes, check if the meat is falling apart.
- Remove excess liquid, shred the meat in the same pan.
- Tip: serve on ciabatta or French bread with mayonnaise, mustard and salad!! It looks wonderful!
