- Pork cut into cubes200 g
- Bacon to taste
- Onion1 unit(s)

- Salt to taste
- Place the paio and the calabrese sausage in a pan with enough water to cover the meats. When it boils, turn off the heat and drain the water. Season the ham with salt and set aside. In the pressure cooker, fry the bacon in the oil. Add the paio, the pepperoni sausage and the ham. Fry a little and then add the onion, garlic, pepper, cumin, coriander. Let it cool and add the beans. Stir well so all the ingredients are incorporated. Fill the pan with water. The ideal is to cover with water until you are two fingers above the beans. Cover the pan and place over high heat. When you get pressure, lower to medium heat and let it cook for 30 min. At the end of the time, take the pressure off the pot before opening it and correct the salt, if necessary. Accompanying suggestion: white rice, cabbage and banana farofa.
