- Dried meat150 g
- Black beans1/2 kg
- Bay Leaf3 unit(s)
- Paio sausage200 g
- Bacon150 g
- Chopped Onion1 unit(s)
- Garlic (tooth)3 unit(s)
- Olive oil2 tablespoon
- Soak the beans overnight
- Cut the dried meat into cubes and place in a bowl covered with water to desalt, ideally changing the water every 3 or 4 hours. I also do this from day to day.
- The next day, put the beans in a pressure cooker, together with the dried meat, and let it cook for 50 minutes to 1 hour.
- In a pan add the chopped onion and garlic, along with the olive oil. Sauté and then add the bacon cut into cubes and then the sausage.
- With the beans already cooked, add the bacon and the braised sausage and a little water to the pan, along with the bay leaves. Let it simmer until the broth thickens.
- Suggested side dishes: rice, farofa, braised cabbage, vinaigrette
