- 2 finger thick filet mignon steaks4 unit(s)
- fresh cream200 ml
- Gorgonzola cheese60 g
- Heat a heavy-bottomed skillet and add a drizzle of oil.
- Season the meat with salt and pepper and when smoke is coming out of the skillet, add the meat.
- Leave the meat on high heat, without stirring, and turn after 2 minutes. Leave the same time on the other side, remove and reserve.
- Lower the heat, add the fresh cream, scrape the bottom with a silicone spatula to capture all the flavors. Add the gorgonzola and let it melt over low heat, stirring constantly, until the sauce thickens and the cheese is completely melted.
- Add the broth that is at the bottom of the plate where the meat is resting to add more flavor to the sauce.
- Serve the meat with the sauce on top and wait for the compliments.
