Filet Mignon Risotto

- Filet mignon baits500 g
- Arborio rice2 cup
- Vegetable broth (Homemade)1 l
- White onion1 unit(s)
- White wine80 ml
- Parmesan (freshly grated)100 g
- Butter80 g
- Nutmeg to taste
- Salt and pepper to taste
- Chives to taste
- Season the fillet mignon with salt and freshly ground black pepper. Reserve.
- Place a small piece of butter with a drizzle of olive oil, finely chopped garlic and fry the mignon baits until golden. Chop 1/2 onion and sauté until translucent. Then put the arborio rice and sauté a little.
- When it starts to stick to the bottom of the pan (2 to 3 minutes) add the white wine and stir until the alcohol evaporates.
- Go in with some of the vegetable broth (the recipe is on my profile). Keep stirring (to release the starch) and adding more broth as soon as it dries. When the rice is soft but still firm, turn off the pan and add the (cold) butter and grated Parmesan.
- Mix well, add nutmeg and freshly ground black pepper to taste. If necessary adjust the salt. Finish with chopped chives.
