- wheat flour1 cup
- eggs2 unit(s)
- pinch of salt1 unit(s)
- breadcrumbs1 unit(s)
- tomato extract1 can(s)
- pinch of sugar1 unit(s)
- slices of mozzarella10 unit(s)
- For the Milanese: Cut the fillet into steaks not too thin (please do not beat) and season them to taste.
- Coat the steaks in the wheat flour.
- Lightly beat the eggs (two or more) with a pinch of salt and dip the steaks in this mixture.
- Make sure the dough sticks well to the steaks.
- Fry the steaks, leave them on a paper towel to dry well and place them in an ovenproof dish.
- Mounting: Make a sauce with tomato paste and a pinch of sugar and place over the fillets. The best will always be your own tomato sauce. Cover them with the mozzarella slices and place in the oven for approximately 10 minutes.
- Personally, I prefer cheese and I recommend sprinkling a lot of grated Parmesan cheese before browning.
- To accompany well browned fries and white rice. It's a delight.
