- Filet mignon or rump steak (no nerve)500 g
- Eggs (beaten)2 unit(s)
- Wheat flour2 cup
- Panko flour2 cup
- Soybean oil1 l
- Ham (sliced)5 unit(s)
- Mozzarella Cheese250 g
- Parmesan (thick grated)50 g
- Tomato sauce (preferably homemade)3 cup
- Chives to taste
- Salt and Black Pepper to taste
- Season the fillet steaks with salt and black pepper (freshly ground). Roll in the flour, then in the beaten eggs (with a pinch of salt and pepper) and finally in the panko flour.
- Fry in hot oil (180 degrees). Drain on absorbent paper. Place the fillets in a refractory drizzled with a little sauce.
- Place slices of ham on top of the fillets and then the mozzarella, on top of the ham, until everything is covered. Drizzle with homemade tomato sauce. Sprinkle with grated Parmesan cheese.
- Place in a preheated oven at 250 degrees to brown the cheese. Serve with rice and fries or spaghetti in salted butter.
