Fillet steak with mushroom sauce

- Olive oil2 tablespoon
- Filet Mignon4 unit(s)
- Small yellow onion, diced1 unit(s)
- Clean brown mushroom1 pound
- Minced medium garlic clove3 unit(s)
- Low sodium beef broth1 cup
- Chopped fresh thyme1 tablespoon
- Balsamic Vinegar1 tablespoon
- Almond milk1/2 cup
- Cornstarch or flour1 tablespoon
- Salt and pepper0 to taste
- Pat the steaks dry with a paper towel and rub with salt and pepper on both sides.
- Heat the oil in a large skillet over medium-high heat.
- Add the steaks with plenty of space between them or cook in batches.
- Let the fillets cook undisturbed for 2-4 minutes on each side.
- When the steak is done, set it aside on a plate and cover to keep warm.
- In the same preheated skillet, add remaining oil.
- Saute onions for 2-3 minutes.
- Add the mushrooms and garlic and continue to cook stirring constantly for 3-4 minutes.
- Add the broth and thyme; let it bubble until the liquid is reduced by half, 5-7 minutes.
- In a small bowl, mix the almond milk and cornstarch well.
- Add the cornstarch mixture to the pan and whisk until the sauce has thickened, 2-3 minutes.
- Mix in the balsamic vinegar.
- Return the meat to the pan and drizzle with the sauce, keeping it on the heat for 1-2 minutes, more or until heated through.
- Garnish with fresh thyme
- Now just serve!😉
