- Recipe
- Whole beef rib with bone4.5 kg
- Coarse salt and pepper to taste
- Season the top of the fat with salt and pepper. I add salt to cover the meat and let it dry. Something around 1 tablespoon per kilo.
- Light the fire and let it reduce until it embers. Place the meat with the fat side up and roast for about 2h30mim.
- Keep an eye on the coals so it doesn't die, add a little more coal every 30 minutes, hands or less.
- Turn the rib and bake for 1 hour. Pass half the sauce. Flip one last time and use the end of the sauce on the bottom.
- Cut and serve (recipe for the sauce on my page here too) you will need a good, sharp knife to cut the bone.
