- Green or black olives to taste
- Salt to taste
- Parsley, Chives and Oregano to taste

- In a pan put the 3 tablespoons of olive oil. Fry the onion and garlic in the oil. Add the ground beef, salt to taste, parsley, chives and oregano to taste. Sauté the ground beef, add chopped black or green olives (to taste) and leave on low heat to dry the water, cooking slowly.
- Stir occasionally.
- Separate the whites and yolks from the 3 eggs Beat the whites by hand until they snow (but it can be a softer snow point) and then add the yolks and mix gently.
- When the water from the ground meat evaporates, pour this mixture of whites and yolk over the meat (leaving the mixture on top, without mixing with the meat), distribute evenly and cover the pan until the egg is cooked.
