- To prepare the shank, after thawing, wash it in running water and dry. Reserve.
- In a food processor (if you have one) mix all the ingredients except the olive oil.
- The mixture will turn into a wonderful juice.
- Pierce the shank in several places and after adding the seasoning, massage it all over, this will make the seasoning penetrate deeper. It is at this time that we add the oil. keep massaging it.
- Leave to marinate for at least 12 hours.
- When preparing, place the shank in a roasting pan with a little seasoning.
- Cover with aluminum foil and bake in an oven at approximately 200 degrees Celsius.
- After 3 and a half hours of cooking you can do the 1st check. It is important not to open the oven beforehand.
- If it's cooked inside, remove the laminate so it can brown all over.
- If you prefer, you can water the shank with the raw seasoning that was not in the roasting pan.
- You will definitely eat a soft, wet and very tasty meat.
