- sliced lizard1 kg
- Salt and pepper to taste
- 2 tablespoons oil2 tablespoon
- wine vinegar1 cup
- beef broth2 unit(s)
- hot water3 cup
- chopped red onion1 unit(s)
- sliced carrots1 unit(s)
- chopped green beans1 cup
- chopped tomatoes2 unit(s)
- fine herbs1 coffee spoon
- whole mushrooms1 cup
- wheat flour1 tablespoon
- water3 tablespoon
- Season the lizard with salt and pepper.
- In a pressure cooker, heat the oil over high heat and fry the slices until golden.
- Add the vinegar, meat broth, water and onion.
- Cover the pan and cook over low heat for 20 minutes after starting the pressure.
- Turn it off, let the pressure come out naturally, open the pan and add the carrots, green beans, tomatoes and fine herbs.
- Cover again and cook over low heat for 10 minutes after starting the pressure.
- Turn it off and let the pressure release naturally.
- Open carefully and return to medium heat without covering.
- Add the mushrooms and the flour dissolved in the water and stir until thickened.
- Season with salt, if necessary.
- Turn off, pack the meat and vegetables on a platter and serve.
