- Onion1/2 cup
- Chopped Garlic Cloves4 unit(s)
- Tomato1 unit(s)
- Salt to taste
- Pepper to taste
- Vinegar4 tablespoon
- Olive oil4 tablespoon
- Brown Sugar2 tablespoon
- Green smell to taste
- Beef broth2 unit(s)
- Water1 cup
- Wheat Flour3 tablespoon
- Blonde2 unit(s)
- Chopped pitted black and green olives2 tablespoon
- Sliced mushroom3 tablespoon
- Butter2 tablespoon
- In the processor or mixer or blender, add the onion, garlic, tomato, salt, pepper, vinegar and green smell. Add a little water just to help beat. Reserve.
- In the pressure cooker, heat the olive oil and brown sugar. Add the meat and brown on all sides.
- Add 500ml of homemade beef broth or 2 tablets diluted in 500ml of boiling water, the bay leaves and the beaten spices. Mix well and cover the pan.
- When you get pressure, cook for 40 minutes.
- Transfer the lizard to a platter.
- Sift the broth left in the pan. Reserve.
- In a small pan, melt the butter and add the flour. Stir well and cook for about 2 minutes. Add broth, 1 cup water, olives and mushrooms. Let it cook for a few minutes until it thickens.
- Slice the lizard and pour the sauce over it. Serve next!
