- lizard piece1 kg
- pineapple juice1 cup
- Salt and pepper to taste
- sliced bacon300 g
- cooked and chopped broccoli3 cup
- Catupiry1 cup
- boiled potato balls with skin200 g
- Red Bell Pepper1 unit(s)
- pre-cooked green beans100 g
- sliced carrots1 unit(s)
- olive oil5 tablespoon
- rosemary1 teaspoon
- thickly sliced provolone cheese250 g
- With a sharp knife, open the piece of meat in blanket.
- Season with pineapple juice, salt and pepper. Let rest for 6 hours.
- Remove from seasoning, pat dry with paper towels and spread out the bacon slices.
- Mix the broccoli with the Catupiry, season with salt, pepper and spread over the bacon.
- Roll up like rocambole and tie with culinary string.
- Place in a mold, drizzle with the seasoning it was in, cover with aluminum foil and place in a medium, preheated oven for 1 hour.
- Remove from the oven, discard the paper and let it cool slightly.
- Remove the string and cut slices 1 finger thick, without reaching the end and separating from the piece.
- Discard the seasoning from the mold and return to the meat.
- Between the slices of meat, divide the sliced provolone cheese.
- In a bowl, mix the potato, green beans, carrots, olive oil, rosemary, salt and pepper.
- Spread around the meat in the tin and return to the oven for another 25 minutes or until the cheese is melted and golden.
- Arrange the lizard with the vegetables on a platter and serve.
