- Salt to taste
- Pepper to taste
- Chimichurri to taste
- Heat the oil well in the pressure cooker and sear the loin on all sides.
- Add the spices and water, squeeze half a lemon and cover the pan.
- Let it cook for about 35 minutes under pressure.
- Serve with boiled or roasted vegetables.
- You can use the water left over from cooking to make a sauce, adding 1 tablespoon of cornstarch and letting it reduce. Correct seasoning if necessary.
