- Loin1 kg
- Vinegar1/4 cup
- Pink salt. to taste
- Dry Chimichurri1 tablespoon
- Marinate the loin in vinegar for at least 30 minutes
- Season the meat in the fat with the salt, I used about 2 dessert spoons and the chimichurri
- Bake for about 2 hours on very low heat. Add 1/2 cup of water and bake for another 30 minutes.
- Baking time may vary. The secret is to lightly squeeze the meat. The fat should be crispy and the meat soft.
