- Separate a pressure cooker, and start washing the mocotó, cut the pepperoni into slices and set aside.
- Then cut the jerked beef into large cubes, wash well to remove the salt and add it with the mocotó and the pepperoni.
- In the pressure cooker, add the crushed onion and garlic and 3 tablespoons of oil. Bring to a boil and sauté, then add the chopped tomato, pepper, chili pepper, coriander, chives and parsley and sauté a little longer.
- Take the meat that is reserved, add the vegetables that have been sautéed, and add the 3 cups of water if you find it too little, add a little more.
- Add the cumin, black pepper, and the coloring (coloral)
- Cover the pan and let it cook for 25 minutes to get everything soft while it cooks, cut the vegetables and set aside.
- After 25 minutes, turn off the heat and add the vegetables and cook for another 5 minutes.
- Ready now just serve with white rice.
