- Bank200 g
- Desalted pork ribs300 g
- tripe600 g
- white beans500 g
- Onion, tomato, pepper, garlic and green smell to taste
- Green Olives150 g
- Tomato sauce200 ml
- Potato3 unit(s)
- Carrot2 unit(s)
- Clean the mocotó well, put it to pressure cook with salt, garlic and coarsely chopped onion for about 1 hour, remove the mocotó from the pressure discarding the water as it is very greasy and reserve the mocotó to cool, after cold remove from the bone .
- Clean the belly well, cut it and put it under pressure with garlic, salt, onion and bay leaf for about 15 minutes (don't let it cook too much so it doesn't fall apart) reserve and don't discard the water.
- Put the white beans to cook in pressure, leave aldente.
- In a large pan, place the ribs, already desalted and cooked, and the sausage to fry, after frying, throw the onion and peppers and leave to sauté, then throw the tomato, the green smell and the tomato sauce, right away throw the carrot cut in half moon and add some of the water from the tripe cooking, leave it for about 5 minutes and then put the potato and the tripe, let it cook for another 5 minutes, then put the mocotó and the white beans, see if the salt is good, add the olives and season.
