- I let the beans soak overnight. I cut the dried meat into large cubes and soaked it for 2 hours and then boiled it for 10 minutes, I didn't remove all the salt.
- I cut the bacon into large pieces, put it in a pressure cooker and fried it over low heat, removed part of the fat and discarded it, added the pepperoni cubes and fried it together, added the dried meat, onion, peppers and garlic, sautéed well.
- I added the spices and water until everything was covered, covered the pan and cooked for 20 minutes under pressure.
- I turned off the heat and added the beans, carrot cubes, chayote and potatoes and let it cook for 5 minutes under pressure.
- Lastly, I added the jilós and cabbage and cooked without pressure until the broth was thick. Finished with green smell. I didn't add salt as the salt in the beef jerky was enough.
