- Start by seasoning the ossobuco with salt and pepper, Place the pan on high heat with a drizzle of oil. When hot, add the meat and brown on both sides. Remove and reserve. Add the onion and garlic to the pan and let it sauté over medium heat until wilted. Then add the tomatoes and cook for 5 minutes.
- Place the ossobuco in the pan and add the water. Cover the pan and count 25 minutes after you get the pressure.
- After 25 minutes, remove the broth, hit the Mixer, and return to the pan and leave on low heat until reduced, for about 5 minutes.
