- Ossobuco300 g
- Carrot cut into medium cubes2/3 cup
- Sliced Onion1/3 cup
- Chopped Garlic1 dessert spoon
- Can of chopped peeled tomatoes1 unit(s)
- Dry red wine1/2 cup
- Olive oil2 tablespoon
- Fresh halved mushrooms1 cup
- Sea Salt to taste
- Ground black pepper to taste
- Chopped fresh spices (rosemary, thyme, marjoram) to taste
- Bay leaf1 unit(s)
- Hot water1 cup
- Chopped green onion2 tablespoon
- In a pressure cooker, heat the oil and sear the meat on all sides. Reserve.
- In the same pan add the onion and garlic and fry well.
- Add the wine and sauté. Return the meat to the pan and add the peeled tomatoes, carrots, salt, bay leaf, pepper, water and fresh seasonings.
- Close the pressure cooker and let cook for 30 minutes after you get pressure.
- Remove the pressure from the pan and check if the meat is tender.
- Turn on the fire, adjust the salt and add the mushrooms.
- Cook for 5 minutes, finish with the chives and serve with creamy polenta.
