- olive oil3 tablespoon
- clean filet mignon without cord1 kg
- mustard3 tablespoon
- chopped fresh rosemary2 tablespoon
- chopped fresh sage2 tablespoon
- Salt and pepper to taste
- butter2 tablespoon
- diced potato cooked al dente1 cup
- diced carrot cooked al dente1 cup
- green beans, cooked al dente1 cup
- Heat a large, thick skillet over medium heat with the olive oil and place the filet mignon.
- Fry until the entire piece is golden brown, turning to be even.
- Transfer to a mold and brush with mustard, rosemary, sage, salt and pepper.
- Take to medium oven, preheated.
- If you want it rare, leave it for 25 minutes.
- If you want to the point, leave it for 30 minutes.
- Remove the meat from the oven, slice and set aside. In a pan, melt the butter over medium heat and add the potatoes, carrots and green beans.
- Sauté for 1 minute, turn off and pour on a platter with the sliced meat.
- Serve immediately, if desired, with rice.
