- Sliced oxtail1 kg
- Tomato paste3 tablespoon
- Boiling water2 l
- Oil5 tablespoon
- Chopped onion1 unit(s)
- Chopped garlic cloves6 unit(s)
- Seedless chili pepper1 unit(s)
- Potato, roughly chopped5 unit(s)
- Watercress leaves1 cup
- Salt to taste
- Black pepper to taste
- Paprika to taste
- Green smell to taste
- Heat the oil in a pressure cooker and fry the oxtail. Reserve.
- Fry the onion for 3 minutes.
- Add the garlic and chopped chili pepper to the stew and fry for 1 minute.
- Add the tomato paste and sauté for 2 minutes.
- Return the oxtail to the pan and cover with boiling water.
- Add the seasonings to taste, minus the green smell. Mix.
- Cover the pan. When pressure reaches, reduce heat to low and cook for 40 minutes.
- Turn off the heat and let the pressure release on its own.
- Add the potato and let it cook until it softens.
- Finally add the watercress and mix. Adjust the salt if necessary. Cover with green scent.
- Enjoy!
