- Dry seasonings1 to taste
- Vinegar1 to taste
- Clean the oxtail well, removing the unwanted parts, put a little vinegar, to remove some of the strong government of the meat and season with salt, pepper, garlic and dry seasonings and put for 40 min under pressure, put the water just to cover the meat. The younger the meat, the faster it cooks!
- Put the polenta with water and salt and seasonings to cook under pressure for 30 min.
- After 40 min of meat pressure, season it with onion, fry well, then put the tomatoes and let it reduce well until it creates a sauce!
- When the polenta is ready, add some Parmesan cheese (optional) and only serve
