- Sliced Oxtail3 kg
- oil6 tablespoon
- minced garlic8 unit(s)
- chopped onion2 unit(s)
- salt to taste
- mixed seasoning to taste
- oregano to taste
- chopped tomato2 unit(s)
- chopped chili2 unit(s)
- sachet tomato paste2 unit(s)
- coriander1 unit(s)
- beef bouillon cube2 unit(s)
- Potatoes cut into 41 kg
- watercress1 unit(s)
- In a bowl, season the oxtail with garlic, mixed seasoning, salt and oregano and 2 tablespoons of oil.
- In the pressure cooker add the rest of the oil, throw the onion and let it brown. Add the oxtail and sauté for 10 minutes
- Add the tomato, pepper, tomato paste, cilantro and beef stock, cover the pan and cook under pressure for 30 minutes.
- Remove the pressure and see if it's cooked, if you need to take it to the fire for another 10 minutes.
- Add the potatoes and cook under pressure for 5 minutes, remove the pressure and throw the watercress and leave only 2 minutes on the fire, turn off and serve
