- for the sauce Sauté the garlic with olive oil, then add the apple. Then the rest of the ingredients. Stir constantly over low heat for 5 minutes, if you want less thick add a tablespoon of water.
- For the pancetta: roast on a low heat grill, first the meat side, then the leather, approximately 2 hours on each side. Then go down to high fire the leather side to pururuc. The crackling seasoning is just salt and black pepper that can be used later.
